Put these dates on your calendar we have many great things happening on the farm during 2010. We hope you join us for some of the workshops, work days, Slow Food Experiences and other events that we will be hosting. Please pass this info along to any one you think would be interested! July 11 - Fermenting Foods
- Do you like kimchee, sauerkraut, kombucha, and such? We will sample and create all of the above from farm fresh supplies. The nutritive benefit of fermented foods will be covered as well as the possible miscalculations that may de-rail your home efforts.
Limit 8 people, Cost $30/person, 12noon-5PM


July 18 - Cheese, Yogurt and Kefir
- Now we're going to ferment dairy with Christina! Milk is made more digestible and is easily stored for long term use through fermentation or aging of cheeses. We will sample many cheeses, yogurt and kefir made from the farm's goat milk. We also make a soft farm cheese and mozzarella as well as discuss hard cheeses like cheddar, parmesan, feta and making of kefir and yogurt!
Limit 10 people, Cost $40/person, 12 noon-6PM

August 1 - How to make Beer and Wine - Always wanted to make your own beer and wine? Russ has been brewing for 20 years and in this workshop we will learn hoe brewing works, what can go wrong, how to experiment and what are the most critical issues that simply can't be skimped. We'll tour the farm's hop yard and orchard to discuss gardening for brewing and to sample raw ingredients. Workshop participants will also have the chance to sample homebrews from the Whitestone cellar!
Limit 8 people - Cost $40/ person, 12 noon-6PM - MUST BE 21 YEARS OR OVER.

August 1 - Blacksmithing Basics - Seth Gaddis has over 20 years experience in blacksmithing and is instructor at the John C. Campbell Folk School. He will be introducing four new initiates into the metal working arts. A clear understanding will be achieved of how to work with fire and metal as well as the material and tool needs for those who want to build their own home forge.
Limit 4 people - Cost $50 - 9AM-2PM (Plan to bring a lunch)

Sept 11 - Patriot Day Seed Saving Workshop for National Security - Russ will cover the essentials of home seed saving. In a country where upwards of 17% of our food is imported, 90% transported more than 100 miles from farm to consumer and fewer than 1% of the population produces more than 10% of their own food consumables...seed saving is an act of liberty and security! Take control of your food, health and life by beginning to seed save and grow your own. Participants will leave with organic seeds from the farm and know how to save more.
Limit 20 people - Cost $15/person - 9AM-12noon

Sept 25-26 - Mushrooming - TWO DAY WORKSHOP - This workshop is in two parts: Wild crafting mushrooms from nature and growing your own in a garden setting. We will gather, sample and dry mushrooms from the farm's organic and sustainable campus on Saturday and address the "mushroom garden" on Sunday. Appalachian mycology is rich, varied and offers dozens of edibles, medicinals and ultra-healthy mushrooms!

October 3 - Axes, Hatchets, Mauls and Knives: Sharpening and Use - Russ grew up using these hand tools and still has many that were given to him by his grandfather. Quality hand tools are a work of art and if cared for properly will last a lifetime (or two or three)! Using a grinding wheel, files and stones we will address the "proper edge" for your axe, hatchet, maul or knife. Feel free to bring your tool in question, but please know we may not have a chance to work on them all, but will discuss and you will know how to handle the edge!
